Also called Trumpet Royale, this hearty and robust mushroom is known for its thick tubular stem, and will stand up to many different cooking methods, including grilling.

Black Pearl
A hybrid of the king trumpet and blue oyster, these beautiful, dense mushrooms have a peppery flavor, and a meaty, firm texture. With edible stems, they can be prepared in a similar way to a King Trumpet.

Italian/Phoenix Oyster

A stronger, more earthy flavor in the oyster family. The absent stem and frilly edges makes their texture soft and velvety.

Chestnut/Cinnamon Cap

Mild in flavor with a distinctive nutty taste, chestnut mushrooms have an exceptional ability to hold their amber color and crunchy texture during cooking. They excel in stir fries, brothy soups, and can also be added atop a salad or toasted bread. Both the cap and stem are edible.
